Unlike Shir Berenj, which is made with whole rice grains cooked in milk, Ferni is made with rice flour, giving it a smoother texture.

How to Make Ferni

1. Mix the Rice Flour with Cold Milk

Add the rice flour to the cold milk and mix well until the flour is fully incorporated.

2. Cook the Mixture

Pour the milk mixture into a saucepan and add the sugar. Place it over medium heat and keep stirring as it cooks.

Lightly crush the cardamom pods with a mortar and pestle, then add them to the saucepan.

Continue stirring until the Ferni thickens and reaches a smooth, pudding-like consistency.

3. Add the Rosewater

Once the Ferni has thickened, add the rosewater and stir well. Turn off the heat.

4. Serve

Pour the Ferni into serving dishes and decorate as desired. Serve it warm, or let it cool before chilling it in the refrigerator.

A Few Tips for Making Ferni

Keep stirring while the Ferni cooks, especially as it starts to thicken. This helps prevent the rice flour from settling on the bottom of the saucepan.

Do not wait for the Ferni to become very thick on the stove. It will firm up as it cools, so remove it from the heat while it still has a soft consistency.

How to Store Ferni

Let the Ferni cool, then cover and refrigerate it. It can be stored in the refrigerator for 2–3 days.
